Snow peas, prawn and avocado salad
|I made this salad after I saw some of my friends eating an avocado with balsamic vinegar, when I ask them why they did that, they said it has a better taste. In my hometown we know avocado as a fruit, but here I use them as vegetables/salad.
Snow peas, prawn and avocado salad
Ingredients:
350g cooked medium king prawn
150g sugar snap peas, trimmed
3 small (600 gr) avocados sliced thickly
2 cups (100 gr) snow pea sprouts
Chives vinaigrette:
¼ cup (60 ml) white wine vinegar
¼ cup (60 ml) olive oil
¼ cup finely chopped fresh chive
Method:
- Combine ingredients for vinaigrette in a small bowl.
- Shell and divide prawns, leaving tail attached.
- Boil, steam or microwave peas until just tender, rinse under cold running water. Drain.
- Place peas in a long bowl with prawn, avocado, snow pea sprouts, and vinaigrette; toss gently to combine.
Serves 4 – 5
