Weekend big lunch? Why don’t try this one.
|After we came home from the grocery store this morning, my husband asked if he can have a bacon sandwich for lunch. I said no, because I had already planned what we are having for lunch.
He never knows what he is going to get for dinner or lunch until food is served on the table. Never once has he been disappointed with what he gets. Lucky me 😊.
Here is our lunch for today.
Eggs stuffed meatloaf.
Serves 2 persons.
Ingredients:
300 gr lean minced beef.
1 egg white.
1 teaspoon garlic powder.
1 tablespoon fried shallots. (Grounded into powder).
Half teaspoon freshly ground black/white pepper.
Half teaspoon fresh ground nutmeg.
2 tablespoons tapioca starch or 1 tablespoon cornstarch.
2 tablespoons cold water.
1 teaspoon salt.
Half teaspoon brown sugar.
2 hard boiled eggs.(shell off). Set aside.
Big pot, half-full of boiling water.
Place all ingredients (except the 2 hard boiled eggs), in a big bowl and mix them together with a fork or a hand blender if you have one. (I use hand blender).
Mix them well until they become slightly pale in colour. Divide the mixture into two. Using the palm of your hand shape each mixture into a round and stuff one of the eggs in.
Pack it firmly by bashing it from one hand to another. Why do this? So that they will not break apart when you cook them.
Once it feels firm enough roll them into size, about 7 cm in diameter. Put them into the boiling water and simmer with a low flame until they are floating. About 15 minutes.
You can serve them right after boiling or you can brown them in a pan with olive oil. Serve them with a vegetables of your choice.
