|Lunch times guys, what you all having for lunch? Today we are having smoked mackerel pasta salad.
Ready? Here we go!
Smoked mackerel pasta salad for two.
Ingredients:
100 gr short or shell pasta.
160 gr baby plump or cherry tomatoes.
120 gr freshly sliced radish.
120 gr broccoli (floret/cut into smaller pieces).
70 gr fresh sweet basil.
180 gr smoked mackerel or smoked salmon.
For the dressing:
1 tablespoon olive oil.
1 tablespoon balsamic vinegar.
Salt and pepper to taste.
Garnish with shaved cheddar cheese.
Cook the pasta accordingly on the package. 3 minutes before the end of your cooking time add in the broccoli florets to cook with the pasta.
Meanwhile put your oven on and roast the tomatoes for 9 minutes. (I did not preheat my oven) you can also roast them on the frying pan for about same time.
While your pasta and tomatoes are being cooked prepare the rest of the ingredients.
Mix the olive oil and vinegar, set aside.
Wash the basil, then tear them roughly into pieces.
Slice the radish to your liking. Put them in a big salad bowl.
Once the pasta and broccoli are ready, drain them and add them into the bowl. Add in the tomatoes and the dressing. Mix well by shaking the bowl. Adjust the salt and pepper to taste.
Transfer into a serving dish and top with the smoked fish. You can skip the fish for vegetarians.
Some of you might be wondering why such a small amount of pasta? Well, when you add all ingredients together, it is actually not that small for lunch or even dinner.
